This is not my first cheese from Cowgirl Creamery – I’ve had the Red Hawk a few times, and I’m a big fan of the Mount Tam, but I’d never had anything else from them, so when I saw this little herby bloomy round cheese sitting in the case, I snatched it up. For total honesty though, I have a major bias towards herby cheeses like this – the Julianna from Capriole was the first cheese I ever fell in love with, I pretty much always have some kind of herby chèvre on hand, and Fleur de Maquis had a place on literally every cheese board I made for….several months (haha). So I came into this with pretty high hopes that I would love it!
And I really did enjoy it! This seasonal little wheel is rich and savory, and the chamomile, calendula, flowers, and basil that top this wheel provide a wonderful herbaceous tone. It’s even a little tangy at times, which is something I really enjoy. The cheese is semifirm, and while it does have a nice complex flavor, it’s super balanced and really accessible for someone who may not be into cheeses that get too crazy. I paired it with a jar of local Strawberry & Vanilla preserves, and a tiny pinch of dried lavender, and really created a delicious balance of sweet / savory / floral notes. I think the Pierce Pt is a lovely option for your fall cheeseboards, and would also make a great little picnic cheese as it starts to get nice and cool outside in the next months!
PROS: Organic, small-format, easy to grab and go, very balanced
CONS: There aren’t really any! Though, if you like really big bold strong cheeses, you may find this one a little too subtle.
